A few years ago, Cy and I bought a farm share and got a bunch of different greens each week. We’d spend a couple of hours on Tuesday nights getting everything washed, spun dry, and put away. And then there was the question of what to do with them. I wish we’d had The Leafy Greens Cookbook by Kathryn Anibale back then, because it would have been a big help. Everything is simple and recipes are tailored to the unique flavors of each of the greens, although there’s plenty of information on possible substitutions as well. It’s not the most complete book on greens you’ll find, but it will probably inspire you to take advantage of the unfamiliar, especially if it’s fresh and available at your local farmers market.
